I'm so proud. My first attempt at cooking cod, and it turned out really delicious.

I bought fresh, not frozen cod at the store and cooked it as follows:

1/2 EVOO (Extra Virgin Olive Oil)and 1/2 Butter: heat in pan until very hot, almost smoking. Place the cod in the pan, seasoning to your preference (I used McCormick's grilling blend.) Cover and cook until the fish is transluscent. Flip the fish over and keep uncovered, cook until it flakes.

I served it with wild rice pilaf and a nice mixed salad. Deeeelish! :)~

You have inspired me. Just made myself a huge deli turkey salad. I don't feel full, but I don't feel hungry. :-)
